One of the simplest snacks to prepare and share with a group is caramel corn. It requires no utensils and everyone loves it—kids and adults. A friend of ours shared this years ago when about 10 ladies descended on her house and visited while a traveling hair stylist took turns foiling our hair! No kidding! J One of the best days of laughter I ever had with great friends. And I got this awesome recipe out of it too! This recipe has been a hit with old and new friends ever since.
Caramel Corn
Air-pop some popcorn until you have 22 cups.
Set aside in a large, oven-safe dish.
In a saucepan on the stove combine:
1 cup butter
2 cups brown sugar (firmly packed)
½ cup light corn syrup
Boil for 5 minutes stirring constantly.
Take off heat and stir in:
1 tsp baking soda
1 tsp salt
Pour over popcorn and turn to coat thoroughly.
Bake in the oven at 300 degrees for 15 min., stirring every 5 minutes.
Spread out on wax paper and let cool.
The caramel corn should be crisp, not sticky.
